Arnold Shubaev is living an adventurous life.
Recently, Arnold moved to Boca Raton from Toronto, Canada so that he cold open up a bakery. Arnold has co-owned bakeries in countries all over the world. Previously he has lived in Israel, Australia and New Zealand where he also worked as an Executive Pastry Chef and co-owned many of these successful bakeries. Arnold was born in Russia and has a deep rooted passion for European baking and creating his masterpieces.
Luckily, Arnold has decided to grace us with his amazing talents and he is ready to satisfy our bellies and our sweet toothes with his brilliant pastries.
There’s a new baker in town
Arnold has recently opened up Keter Bakery Cafe. Keter Bakery Cafe is a bakery and also a cafe serving breakfast and lunch. Luckily for us, they are located right on the corner of 20th Street and Federal.
Besides the custom cakes (they can recreate any photo into an edible cake) Keter specializes in authentic, artisan French croissants. Chocolate is the most popular because… of course it is.
Keter sets itself apart from the rest with their dairy-free custom cakes. The cakes also are made with all kosher ingredients. They have a daily selection of savory & sweet pastries and desserts: cinnamon rolls, chocolate croissants, almond croissants, donuts, cookies, bourekas, cheese croissants, cream puffs, cheesecake, quiches, challahs and sourdough breads.
I had a chance to speak with Arnold briefly and to hear first hand what it is that he feels most passionate about with his products.
“Usually custom fondant cakes look good and don’t taste good. Ours are so delicious. What sets us apart is that our desserts are not overly sweet. You can taste the ingredients in a pastry (custard creme, doughs, fillings) and are not overpowered by sugar. Everything we make is baked from scratch in house, all our breads and challahs are made by hand as well. We’ve had people from Paris comment that they’ve never had such a good authentic croissant outside of France until they’ve tried ours. And our napoleon is a best seller. The house made custard is delicious, not too sweet.”
They’re obsessed with FRESHNESS. They select ripe produce, organic when possible, and use the processes and simple ingredients found in a regular health conscious home kitchen. I suggest you try the Khachapuri – it’s a Georgian cheese filled bread boat, baked to order and topped with an egg. So delicious!!!
Take a seat and enjoy the avocado toast, which is an open faced toast with avocado, boiled egg, tomato, and red onion. Or the four cheese panini made from cheddar, mozzarella, havarti, and feta.
Last but not least, enjoy your breakfast along side with a hot cup of delicious coffee. Yeah… Keter has that too.
